This weekend, in addition to my goal of being Lakewoods best massage therapist, I made it my mission to make the best Vegan Zucchini bread I've ever made, its the first one too!
Living near Tacoma the choice to make my zucchini bread vegan was easy to do. Recently I made a new goal to eat little to no meat meaning most of the food I eat is vegan. My hope is to find a better balance in my diet and live a healthier lifestyle. So far in this vegetarian journey I have enjoyed it, way more than I thought I would! I feel better emotionally as well as physically not to mention how much better my belly feels. (have any questions about what else I eat? please ask me!)
I searched around and found a recipe on showmetheyummy.com that I thought sounded the easiest and most like the other zucchini breads I have made. I HIGHLY recommend you go check out her page before you make this, she has a full video you can follow and she makes it really easy and entertaining!
When grating the zucchini I got a little overzealous I forgot I only needed 2 cups (I made a double recipe) I had already shredded more than 4! Based on that I knew i had to change things up a bit and use more zucchini, oops. Try both the original and mine and let me know what you think is best.
Vegan Zucchini Bread
Chia Egg
1 tablespoon chia seeds
3 tablespoons water
Dry Ingredients
1 3/4 cups whole wheat flour (I got it in bulk at Winco)
2 teaspoons baking powder
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
Wet Ingredients
1/3 cup coconut milk
2 tablespoons apple cider vinegar
1/3 cup orange juice
1/3 cup coconut oil melted
2 teaspoons vanilla extract
2/3 cups brown sugar packed
2 cups grated zucchini loosely packed (I used a large cheese grater, then when it was grated I put the zucchini into paper towels and squeezed out some of the fluid, this keeps the bread from being too soggy)
Instructions
Preheat oven to 350 degrees F.
Grease a 9x5 loaf pan with cooking spray and line it with parchment paper for easily removal.
Chia Egg
In a small bowl stir together chia seeds and water.
Let sit for 10-15 minutes.
Dry Ingredients
In a large bowl, whisk together dry ingredients.
Wet Ingredients
Whisk together milk - brown sugar.
Stir in chia egg and grated zucchini.
Pour wet ingredients into the dry ingredients and gently stir, using a spatula, until *just* combined. Don't over mix.
Pour into prepared loaf pan and bake for 40-50 minutes, or until loaf has cooked all the way through. for Muffins bake for 25-30 minutes
Cool and enjoy!
I also made a variety where I traded the Brown sugar for 1/2 cup Honey, I cooked this batch as muffins for they weren't nearly as sweet but they were very good!
Seriously the best Zucchini Bread I've ever had!! This Zucchini Bread was not greasy or dry at all.
